The Best and Lightest

The Best and Lightest Cookbook, subtitled, 150 healthy recipes for breakfast, lunch & dinner, has so many healthy and light meal recipes! I’ve made several dishes already, and haven’t been disappointed with any of them.

I was surprised by the thickness of this paperback book! At 336 pages, it is chock-full of tasty treats, side dishes, and meals. The pages are thick and sturdy, and stay open to the page you want, without using a weight or without. No losing your place, or having to (gasp) dog-ear the page.

One of my favorite things about this cookbook, other than the tasty recipes, is THERE ARE FULL-PAGE PHOTOS FOR EACH RECIPE! Yay! These professional photos inspire me to not only cook, but to make them look like works of art. After all, we eat with our eyes first, right? And cookbooks without photos are boring and intimidating.

The recipe sections are:

Of course, I’ve already worn the Sweets section out. I mean…seriously… who can turn down Banana-Almond Pudding [pictured in review], or Balsalmic Strawberries? Hm?



One of my favorite recipes I’ve tried so far, for simplicity and ease, is the Chickpea Chicken-Noodle Soup on page 41 [pictured in review]. I made it strictly by the book, with no variations. Next time I’ll omit the cinnamon. It’s a strange ingredient for chicken soup. I took a chance, and the soup was delicious, but the cinnamon gave it a weird aftertaste. Nothing horrid, just… weird. Perhaps I’d use hardier noodles next time as well, (the recipe calls for broken spaghetti) Maybe rotini or macaroni noodles would stand up better.

There is a cool Recipe Index in the front of the book [pictured in review] that shows a thumbnail print of the dish, identifying the page number, as well as if the dish is V (vegetarian), VN (vegan), or GF (gluten-free)

In this book, you can find recipes that have everyday ingredients, are easy to prepare, and are super healthy. Certainly one of my favorite cookbooks.
